The House of Pumpkin
My cooking interest was expanding over the past few weeks. It was rare to have someone here to taste my food and give some pieces of comment until last week and hence I had come out with a list of cooking items.
I am a fan of pumpkin. I bought a pumpkin, and thought of cooking it differently. Here are some of the recipe I made for pumpkin.
1) Pumpkin Juice with Sago 南瓜西米露
a) Steam the pumpkin, then remove the skin and cut into pieces. I normally use this method as I do not like to cut the raw pumpkin which is damn hard.
b) Blend the pieces of pumpkin with some water (vary on preferences) .
c) Add some sugar if it is not sweet enough
d) Freeze it in the fridge
c) Add cooked sago and serve
2) Pumpkin steam egg 南瓜炖蛋
a) Steam the pumpkin, then remove the skin and cut into pieces
b) Mash the pumpkin
c) Stir four eggs with sugar and a little bit of water
d) Put the eggs on a plate and steam it with low heat, for around 10 minutes
e) Place the mashed pumpkin on top of the egg
3) Salad with pumpkin 南瓜沙律
a) Prepare ingrediants such as pumpkin, lettuce, yellow onion (sliced), capsicum (sliced), kidney beans, red chillies (sliced), cherry tomatoes, and salad dressing
b) As usual, steam the pumpkin, remove the skin and cut into pieces
c) Place the lettuce on the most bottom, followed by yellow onion, capsicum, pumpkin, kidney beans and red chillies (vary on preferences)
d) Add the dressing
4) Grilled Salad 煎沙律
a) The ingrediants are same as above, but with added mushroom
b) Keep them in a plate and now start with quick frying some minced garlic, before grilling the rest ingredients such as onion, mushroom, capsicum and last but not least the red chillies
c) Add Maggie seasoning sauce, some sault and black pepper while the grilling continues.
d) Include the cooked pumpkin pieces and kidney beans
e) Serve
5) pumpkin porridge 南瓜粥
It is a dish modified from sweet potato porridge
a) Cook the porridge
b) Add in the pumpkin and cook together when it is almost done
6) pumpkin wrap 南瓜卷
It is a dish modified from sardine wrap.
a) Steam the pumpkin, then remove the skin and cut into pieces
b) Mash the pumpkin
c) Stir water and flour until the flour are nicely uniformed with the water
d) I prefer thicker paste(by adding more flour) as the wrap come out will be more chewy
e) Add an egg and beat it together with the paste
f) Add some salt and pepper
g) Heat the pan and fry the dried shrimp. Mixed with mashed pumpkin together
h) Pour the paste and fry it
h) Remove the wrap from the pan when it changes to golden color
i) Place the mashed pumpkin as the filling and wrap it.
7) Pumpkin rice 南瓜饭
a) Prepare ingrediants such as garlic, onion, ginger (little will do), mushroom, dried shrimps, meat (minced or sliced), and of course pumpkin (cut into pieces)
b) Quick fry the ingrediants mentioned above except for pumpkin and meat
c) Cook the rice with the fried ingrediants. Please cook with slightly less water than normal water volume used to cook white rice.
d) Add pumpkin and meat onto the rice when it is 75% cooked. You may grill the chicken first.
e) Add seasoning
f) Mix the rice with the ingredients on top
